A commercial combi oven installation is more than setting the unit in place. For a stacked pair of Eloma GENIUS MT ovens going into a new metro-area kitchen, the work included moving the ovens in on pallets, stacking and leveling the two units, connecting the water supply and drain lines, landing the electrical, and commissioning each oven so its controls, heat, and steam functions were verified before handoff. RD Appliance is a factory-authorized Eloma servicer and handles this equipment across the five boroughs, Long Island, and the surrounding metro. Because a combi oven ties into water, drainage, and power, a correct installation protects the warranty and keeps the oven cooking evenly from the first service.
What a Commercial Combi Oven Installation Involves
A new combi oven is a serious piece of equipment, and getting it running is a project, not a drop-off. Here is what a recent stacked Eloma GENIUS MT installation looked like from delivery to the first cook.

The Job
The ovens arrived crated on pallets and were moved into a kitchen still under construction, with the insulated wall panels going up around the space. The technician set and stacked the two GENIUS MT units, then opened the side to run the setup: connecting the incoming water lines and the drain, landing the electrical, and checking the internal components before power-up. A combi oven runs a fan-driven convection system alongside a steam generator, so the water connections and drainage matter as much as the power. Once the lines were made and the units were leveled, each oven was powered on and its controls were brought up, with the cooking programs and the steam and heat functions verified on the panel before the kitchen took it over.
What a Combi Oven Needs From an Install
A combi (combination) oven cooks with convection heat, steam, or both, which is why commercial kitchens rely on them for roasting, baking, and holding in one footprint. That flexibility comes from systems a dry oven does not have: a steam generator or direct water injection, a drain for condensate and cleaning, and usually a treated water line to protect the boiler from scale.
A sound installation gets four things right: level and stable stacking or footing; a correct water supply at the right pressure, with treatment where the local water calls for it; drainage that meets code; and electrical or gas service sized to the unit. Skipping commissioning is where problems start. Verifying the controls, heat, and steam at handoff is what separates an oven that runs for years from one that throws faults in its first month.
